FINDRA’s Weekly Inspiration: “I wandered lonely as a cloud”

Here at FINDRA, we’re always looking to bring you snippets of motivation to get you inspired for your own everyday adventures. So what’s caught our eyes and ears this week, the first week of spring?

Favourite Poem of the Week

Lonely as a cloud

This poem by William Wordsworth was inspired by a walk in the Lake District with his sister where they saw “a long belt of” daffodils along the shore. Daffodils are the perfect emblem of spring, bright and golden as the sun, and we just love this timeless poem!

I wandered lonely as a cloud
That floats on high o’er vales and hills,
When all at once I saw a crowd,
A host, of golden daffodils;
Beside the lake, beneath the trees,
Fluttering and dancing in the breeze.

Continuous as the stars that shine
And twinkle on the milky way,
They stretched in never-ending line
Along the margin of a bay:
Ten thousand saw I at a glance,
Tossing their heads in sprightly dance.

The waves beside them danced; but they
Out-did the sparkling waves in glee:
A poet could not but be gay,
In such a jocund company:
I gazed—and gazed—but little thought
What wealth the show to me had brought:

For oft, when on my couch I lie
In vacant or in pensive mood,
They flash upon that inward eye
Which is the bliss of solitude;
And then my heart with pleasure fills,
And dances with the daffodils.

Recipe of the Week

If you’re trying to squeeze dinner in around the increased activity which naturally comes with spring, you might be looking for something easy but delicious to eat in the evenings. So how about a vegetable frittata? This versatile dish can be paired with a salad or pop a slice in a Tupperware box to take for lunch the next day. The joy of the frittata is that you can use up some of those lonesome vegetables close to their use-by date you have sitting around.

To serve 4, you’ll need:

  • 2 tablespoon extra virgin olive oil
  • 1 small onion, peeled and finely sliced
  • 2 garlic cloves, peeled and minced
  • 250g (9 oz) mixed, diced, cooked vegetables of your choice (we recommend potato, peppers, courgette, tomatoes or mushrooms)
  • 1 cup of cabbage, shredded
  • 6 large eggs, lightly beaten
  • 1 tablespoon flat leaf parsley, finely chopped

1/. Heat your grill to a medium temperature. Heat 1 tablespoon of the olive oil in a 23cm frying pan and cook the chopped onion on a low heat for about 5 minutes until soft. Take care not to burn. Add the garlic, stir, then add the cooked vegetables and cabbage. Cook for a further 2 mins.

2/. Season the beaten eggs with a twist of black pepper and a little salt at the last minute. Give the eggs a good whisking.

3/. Tip the beaten eggs into the cooked vegetables in the frying pan and stir. Add the parsley and stir well.

4/. Turn the heat down to low and cook until the sides and centre of the omelette is barely set.

5/. Transfer the frittata to under the grill and cook for 10 minutes or until golden brown.

6/. Remove from the heat, and leave to cool slightly. Enjoy!

Good News Story of the Week

You can never go wrong with a bit of good news from around the world. This week’s bit of good news comes from Russia, where Daria Pushkareva, a successful wedding photographer, gave up her job to buy a house in the woods to care for rescued animals.

Daria and her husband live mostly off-grid in their house and devote all of their time to these wonderful rescues who otherwise would’ve been euthanised or killed for the fur industry.

Keep up with Daria and the rescues over on her Instagram.

Music of the Week

We’re building a FINDRA Community Playlist over on Spotify, bringing you music of a rather electric variety! From classic dance tunes to lesser-known indie songs, we hope there’s something new in there for you. If you’ve got a favourite you’d like to hear in the playlist, drop us a tweet!

Picture this: the late afternoon sunlight coming in through your living room window, warming the floor and bouncing off the walls. Does that sunlight fill you with energy as it does for us? Team FINDRA’s Helen tells us that this song is the perfect tune to dance around to in your living room – apparently she’s done that a lot!

Give it a try, we guarantee you’ll have a smile on your face!

Whatever you’re up to this week, friends, remember to find your everyday adventure.

Love, Team FINDRA x
