FINDRA’s Favourite Recipes: Orange Cardamon Christmas Truffles

We all know that Christmas is a time of plenty, where you begin to feel bogged down with the excesses of the time of year.

Whether it’s too much turkey, a glass too many of wine or just leaving the chocolates within reach for too long, we can all start to feel a bit bogged down and in need of a pick me up.

As an alternative to one more chocolatey Christmas treat, we bring you Healthy Orange Cardamon Christmas truffles. A sweet treat that’s packed with goodness and guaranteed to make you smile. These treats are packed full of dates that are known to promote digestive health, promote a healthy heart and reduce blood pressure. The sprinkling of Cardamon might help with any Christmas heartburn left over from all that excess.

These treats don’t require any cooking and involve getting your hands stuck in, so a fun one for the kids to get involved with too. You should be able to find everything you need at the supermarket or a health food store

Orange Cardamon Christmas Truffles

So get blending and treat yourself to a great taste that makes you feel fabulous.

Healthy Orange and cardamon Christmas Truffles AKA Bliss Balls (makes about 10)
75g whole almonds
100g Medjool dates (Medjool dates are quite moist and blend well, but you can use ordinary pitted dates and just add 1 tbsp of water along with them)
1.5 tbsp raw cacao powder (or cocoa powder)
1 tbsp coconut oil
1 large tbsp almond butter
grated zest of 1 orange
ground cardamon from 3 cardamon pods (about half a tsp)
20g desiccated coconut
1/. In a powerful food processor or nutribullet grind the almonds to a powder. Then add the cacao powder and process until combined.
2/. Add the coconut oil, almond butter, cardamon, orange zest and the dates a few at a time and blend. You will need to stop a few times and scrape down the sides of the blender. It may help to have a small bowl beside you to separate the mixture into 2 and blend everything gradually. Make sure the dates are all processed – this does take a bit of time to get everything blended nicely.
3/. Once everything is nicely blended together roll the mixture into even size balls, then roll each in the desiccated coconut.
Store in the fridge for up to a week (if they last that long) in a sealed plastic container.
