FINDRA's Favourite Recipes: Chocolate Energy Balls

We don't know about you, but Easter eggs can multiply and end up just be far too much chocolate lying around the house! How about making some chocolate energy balls instead? They're the perfect snack for a busy lifestyle whilst getting a little bit of an Easter treat in there!

For 18 energy balls, you'll need:

  • 1 cup raw almonds

  • 15 Medjool dates, pitted (1.5 cups)

  • 1/2 cup unsweetened cocoa powder

  • 1/3 cup unsweetened shredded coconut

  • 1 teaspoon vanilla

  • 1/4 cup mini chocolate chips


1/. Place the almonds into a food processor and process on high until you’ve created a fine almond meal, but not to the point of a paste.

2/. Add the rest of the ingredients to the food processor and process on high until everything is combined. Add one or two teaspoons of water if necessary.

3/. Scoop a heaped tablespoon of dough into your hands and roll into a ball. Roll the ball in shredded coconut and place on a baking sheet. Repeat until dough is all used up!

4/. Place the baking sheet in the freezer for 10-15 minutes and then transfer balls to a freezer safe bag and store in the freezer. They can be stored for up to 3 months if you don't eat them all straight away.
